Mooncake with Egg Yolk and Lotus Seed Mash Recipes

Ingredients :

Mooncake with Egg Yolk and Lotus Seed Mash
  • 300g plain flour
  • 48g lotus seed mash
  • 10 salted egg yolks
  • 196g syrup
  • 7 tbsp peanut oil
  • 1 tbsp pu'er tea
  • 1/2 tsp lye
  • Egg Liquid
  • 2 egg yolks
  • 1 tsp sugar
  • 2 tsp water

Method :
1.    Mix pu'er tea with lye.
2.    Wrap salted egg yolks with greased tin foil. Bake in oven for 20 minutes at medium heat.
3.    Divide lotus seed mash into 10 portions. Make a hollow in the center of each lotus seed mash portion. Put in an egg yolk. Shape into a ball. Set aside.
4.    Sift plain flour.
5.    Add syrup and oil. Knead into dough. Cover with wet cloth for 4 hours. Divide into 10 portions. Wrap each ball with one portion of dough. Put into the cake mould. Press flat. Take it out. Arrange on greased baking tray.
6.    Pre-heat the oven for 15 minutes at 200C. Put in cake and bake for 15 minutes. Then turn to 180C and bake for 5 minutes. Take out and sprinkle with a little water. Then bake for 5 more minutes. Brush with egg liquid and bake for 10 minutes until golden. Serve.
